We raise Berkshire pigs, a heritage breed, for our pork. They are naturally raised in oak woods and open pastures. Their wild diet is supplemented with grains including corn, oats, and barley plus some alfalfa and minerals. We do not use hormones or antibiotics.Our pigs are sold by the half or whole with custom cuts available to the customer. In our store and at the Farmers market we sell USDA-inspected pork cuts that are vacuum packed and frozen. Some of the cuts available now are pork chops, hocks, pork belly, ham steaks, ribs, hams and picnic roasts. We also have some pork made into various types of sausage by Transatlantic Sausage Company and we are currently working on our own signature ground sausage recipe.
Here is an excellent recipe for Pork Belly:
2 cups Coca Cola
2 cups sugar
2 tablespoons coriander seeds
2 tablespoons fennel seed
Steamed white rice, for serving
